Build as a French Tian </div>

cut all veggies with a mandolin build a caramelized onion at the bottom or the dish place all veggies in a row or as a mosaic olive oil, salt, pepper ,herbes de Provence or my chimichurri seasoning </div>

Foods Artisans are not in the same category as Circle Craft members and every year since One of a kind closed down in Vancouver Circle craft have draw a different set of rules for us </div>

we have a higher rent and every year all the name of the foods Artisans are put in a hat and 10 name are draw the one's pick are not welcome back and have to take a year off </div>

On October 30, Mary Forstbauer, matriach of the Forstbauer Family Natural Food Farm, passed away from complications arising from a blood infection. She leaves behind her husband, Hans, 12 children and over 30 grandchildren. Her passing is a great loss to the farmers market community.</div>

If you didn’t have the chance to meet Mary Forstbauer in person, you surely have benefited from her perseverance and vision because farmers markets in BC have been changed for the better by her work.</div>

Mary was an amazing woman and has left an amazing legacy. Not only did she raise 12 children – an accomplishment that is hard for most of us to even imagine. She was also an accomplished farmer and businessperson. For over 30 years, her family has farmed in Matsqui and Chilliwack, bringing wholesome food to farmers markets since we opened our first location at Trout Lake. She was a pioneer in the sector, a role model for many market farmers.</div>

She was an advocate and fighter; passionate about organic agriculture, farmland stewardship and farmers markets. Her work at the BC Association of Farmers Markets cannot be understated – she WAS the organization at different times in its development and gave countless hours of her time keeping it together and helping it grow. </div>

Even though she was obviously a busy person, Mary made time to serve on volunteer boards of directors, attend new and small markets to help get them on the right path and was always available to give advice to the new farmer or market manager. Her generosity with her time and attention has benefited many of us and most definitely the agriculture and market communities of this province. </div>

Mary sat alongside VFM staff at many meetings between local health authorities and market organizers, bringing real, honest experience and common sense to the table. People listened to Mary and she got things done. She cared about her community – organic farmers, all farmers, shoppers, eaters, her family, all families. </div>

I realized how relaxing it is to take a bit of time before a flight, often at 6 AM. 1 large green pepper, diced</div>

1 large onion, diced</div>

6-7 cloves of garlic, minced</div>

2 tablespoons of olive oil</div>

2 cans of garbanzo beans</div>

5 to 6 medium russet potatoes, cubed </div>

2 teaspoon saffron, ground to powder in mortar and pestle</div>

1 tablespoon oregano</div>

2 quarts of water</div>

2 bay leaves</div>

salt and pepper to taste</div>

1 pound of cubed smoked ham</div>

2 chorizo sausage (the cured spanish type, not raw)</div>

Sauté the green pepper and onion in olive oil until tender, about 5 minutes. Add garlic and sauté about 1 minute. Add ground saffron powder and mix well.</div>

Add potatoes and coat with the saffron so they are yellow. Add the beans, water, bay leaves, oregano and the cubed ham. Bring to a boil and add salt and pepper to taste. Cook until the potatoes are tender. Add the chorizo about 30 minutes before serving.</div>

<span itemprop="recipeInstructions">1. To prepare the carrots: Bring a large pot of lightly salted water to a boil over high heat. Prepare an ice bath by filling a large bowl halfway with water and adding a tray of ice cubes.<br /><br />2. Blanch the carrots in the boiling water until tender when pierced with a knife, about 3 minutes. Drain the carrots and plunge into the ice bath to shock them—i.e., stop the cooking and cool them quickly; this procedure also locks in the carrots’ bright color.<br /><br />3. Drain the carrots again. You want them to be relatively uniform in size, so if any of them are large, cut them lengthwise in half.<br /><br />4. To prepare the marinade: Put a small dry skillet over low heat, add the chilies, and toast for 1 or 2 minutes; shake the pan so they don’t scorch. Break up the chilies and put them in a food processor. Pulse the chilies to a coarse powder; you should have about ½ cup.<br /><br />5. Put the chili powder in a mixing bowl, add the vinegar, garlic, cumin, kosher salt, black pepper, and red pepper flakes, and whisk until blended. While whisking, slowly pour in the oil in a stream until emulsified.<br /><br />6. Put the carrots in a mixing bowl and pour in the chili mixture, tossing to coat. Marinate for 1 to 2 hours, tossing periodically. 7. To serve: Crisscross the carrots on a platter. Scatter the micro greens and almonds on top and season with flaked sea salt.<br /><br />To Make the Almonds:<br />1. Put a cast-iron or other heavy skillet over medium-high heat. Pour in the oil, add the rosemary, and stir to infuse the flavor into the oil. Heat the oil to around 300°F. (You don’t need a thermometer for this: Drop an almond into the oil. When it sinks a bit, then floats right back to the top and starts sizzling, the oil is hot enough.) Once the oil is ready to go, add half of the almonds and cook, stirring constantly, until they are fragrant and toasted, 10 to 20 seconds. Using a slotted spoon, remove the almonds from the oil and drain on paper towels. Sprinkle them with the salt while they are hot. Repeat with the remaining almonds. 2. Sprinkle the gelatin over your small bowl of water. Set aside.3. Heat your honey, sugar and water over medium heat. No need to stir very much.4. While the sugar is cooking, start beating your egg whites and salt in a stand mixer until you reach soft peaks.5. Once your sugar syrup reaches 240, slowly drizzle it, with the whisk attachment running on medium speed, into the egg whites. 240 will look like thick, heavy bubbles. Do not allow it to caramelize.6. Keep beating the mixture for about 2 minutes. Add in your gelatin and beat another 10 minutes.7. Pour into prepared pan, spread a bit and sprinkle with starch or powdered sugar. Jean-Pierre Côté is an irrepressible sort. Good thing, because his chosen path included plenty of patience until his business really got rolling. The French Canadian arrived in <a href="http://montecristomagazine.com/tag/vancouver" style="color: black; outline: 0px;" target="_blank">Vancouver</a> in 1991, determined to make his way here. “There was really not much in the line of fine spices, infused oils. These things were quite exotic back then,” says Côté, as he contemplates his cappuccino. These days, at his Maison Côté kiosk on <a href="http://montecristomagazine.com/the-guide/shopping/granville-island" style="color: black; outline: 0px;" target="_blank">Granville Island</a>, there is virtually no limit to the kind of goods customers can find, and consumer awareness is at an all-time high, which suits him just fine. “I love the fact that this community has so rapidly grown into its culinary knowledge,” he says. “I love the challenge of enticing well-informed people with new things.”</div>

It all began when Côté was working for Stock Market, making ends meet, and doing some moonlighting, cooking for some friends. They then opened a restaurant in Richmond, but people were most impressed with his collection of sea salts, and some infused olive oils. His gift for repartee, and his penchant for speaking his mind clearly, became trademarks of a sort, as his loyal following grew into a demand for a retail option for his products. He had a cart at different locations across the Lower Mainland before settling on Granville Island. “I did everything by hand, basically homemade, which is exactly what I do now,” says Côté. “Although the business has grown, and I do travel a lot, to find great new things to share with my clients.”</div>

When he says everything is done by hand, that is meant pretty well literally. He sources the best ingredients, in bulk, portions and packages them, specializing in creating completely unique blends or combinations. Côté still appreciates cooking for some of his clients, and it is a way of introducing new ideas to people. “My clients are often friends, as well,” he says. “So I really enjoy cooking for them.” There is a balance between exploring new things, and fulfilling expectations, but he walks that line very well.</div>

Using his Papineauville upbringing as a base, Côté began infusing olive oils and doing unique sea salt infusions, and steadily grew the menu of items, while simultaneously helping nurture and grow his customers’ appreciation and subsequent desire for the products. It is easy to forget, in these times of market saturation, that such a thing as smoked sea salt was considered extremely exotic 20 years ago. “It took time, of course,” says Côté. “But I really knew my customers would enjoy the products. Many of them had travelled, and had great culinary knowledge anyway. It was a case of providing some of these things right here at home, and not having to travel to Brittany or Morocco.”</div>

There is the salt collection, really where Côté began to build his reputation. Today, you can find such things as Cowboy salt (chili and pepper); French harvest (with porcini mushroom); Madras curry with fennel and poppy seed. There are over 480 options in all. Then there is the pepper collection, numbering over two dozen, and all clearly enunciated in terms of light sensitivity, grinding suitability, oiliness. There are mustards, vanillas, other spices, and of course, oils and vinegars. Many of the items are hand-packed, usually at $9 per bag, or $22 for three. All in all it is clearly a gourmand’s dream store.</div>

Customers can order online, or find Maison Côté products at Granville Island and a few select farmers’ markets. There is no wholesale option, so no alternative retail outlets; Côté firmly prefers to keep his products strictly on a customer-direct basis.</div>

Maison Côté produces 60 tons of seasoned sea salts per year, five tons of peppers, and many spices. The self-professed mandate is “to create new edibles every year to please your palate.” On that count, it is mission accomplished, and judging by the nearly boundless energy he displays, in a conversation ranging and careening into all kinds of interesting directions, almost all pertaining to his abiding passion for food and the exotic products he makes, to enhance almost any dish you care to cook, there is absolutely no stopping him. Not back then, in 1991, and certainly not now.</div>
