Fresh Pasta is so easy

2 cup of flour, 2 egg, and a bit of cold water start with a soup spoon and adjust some flour absorb more then other as I am using here a 00 I add 1/8 of a cup of water,

as I use an infuse 00 tomatoes flour I was surprise to see chunk of sundry tomatoes I pass to a sieve and ground it find into my food processor add to my preparation let it spin with a regular beater not the dough hook, till it crumble in pieces

Then I go manual to work the gluten, let rest for 30 Min. at least

Then I need to make so ricotta to go with my pasta 2 liter of whole milk and a cup of whipping cream the juice of one medium size lemon. in a non reactive pot add milk and cream, bring to a slow rolling boil then add the lemon juice stir for 30 Sec and reduce the heat

Filter to large sieve with cheese cloth

let drain it well, you could add seasoning as a pesto then you could

Rolling the dough

Stuffing made with fresh ricotta blend with black kalamata olive

On of the great deal with this hotel as they cater to traveler I check out early get to the

J. Paul Getty Museum get back around 5 and wait at the pool and the lobby before the Airport shuttle bring me back to LAX.

I have to say this hotel is very friendly to the clients waiting for a late flight

I was a bit shock on how you miss this when you clean a room but a lot worst could happen so I pack them with the hotel pen to the plastic bag for the Ice bucket

When I bring them to the reception they look mortified and offer to removed the $12.95 Internet Charge

This was nice of them.

Last week end in San Francisco my friend told me when in LA last week they had a great meal at Paparazzi at there hotel in Los Angeles. I told them this is my lat destination this week before coming back to Vancouver so instead of going to venice beach and stay at the hotel and rest and give a shot at this place. Well I should have gone to venice beach

If you mist the 1970 you will be happy decor is modern but the food is very old school, heavy, and not close to any todays standard

Great service the staff work fast and hard, very professional and polite

First a sundry tomatoes pesto served with half a loaf of bread, the pesto was so flat they need a acid to make it more palatable caper or pickle olive ... I request some raw garlic to add to it + seasoned it with salt and pepper

The Eggplant parmigiana, so much cheese and over cook I just taste the fat and salt of the cheese

The Ossobuco to much sauce but the ossobuco was OK

Would I get there again, No. There is just not enough time to waist with average meal

I was in San Francisco for the Fancy food Show and fund a ticket on the second row at $250.00 instead of $1375.00 some of the joy of traveling alone, so book a room at the Caesar Palace a flight from San Francisco with return next day to Los Angeles

The Show was so great, She deliver all the songs with brio, the pipe are wonderful, The best moments for me where at 17th from Janis Ian, Mr. Paganini, surprisingly Michael Jackson (I was never a real fan) so well done, the duos are great, and the Technical for Titanic song, again not a fan of This song but WOW. Another full house 4100 of us at the Colosseum Theater with a great evening.

As I am a respectful person we where ask to not take any pictures and I did not so you will have to go yourself to see this very beautiful show

I was invited for a fantastic dinner at my friends and chef Kev was so happy to show me is new copper mold, purchase in Korea for cannele de Bordeaux

After going to a craft fair @ croatian cultural centre and seeing sea to sky seasonsings, I stumbled onto your website to read what has happened to you with the edible bc. It made me quite upset reading this story. I had thought that their sea to sky seasonings was a unique product and was produced by an artisan who was fortunate enough to have Edible BC carry their producets. I had bought quite a lot, only to find out that even the name was taken from your company. I see that you will be at Granville Island from the 12th to the 18th. I am not sure if I would be able to drop by during the week day but had a question about the 17th. You will be at both the famers market and the Granville Island Public Market? I would prefer to go to Granville island as I will be in that area and wanted to know if you will be having similar product?

The sad part in it there was a article in the Vancouver Sun this week:

Sea to Sky Seasonings started on his kitchen table in Squamish after Edible BC lost its specialty salt supplier.
"We had been selling flavoured salts for a number of years when our supplier decided he didn't want to whole-sale any more," Pateman said. Edible BC has lost a number of producers who decided that the leap from cottage to commercial was too hard and packed it in.

Yes I was the specialty salt supplier it is funny as Mr. Pateman try to give itself a good conscience as we never stop whole sallying our products to him, he just stop ordering from us, they move lot of my products for 5 years and as Mr Pateman said they sale up to $10,000 a month of my Products. Mr Pateman is a business men with an MBA from England, I was is biggest supplier (with no love between each other I must say), he saw the value in my product
Now he produce a very similar product as my best seller for is store, he wholesale it in more then 100 stores and he try to get to the same Farmer market I do. I tried your products last year on a business trip to Vancouver. You were at the Granville Market.
This year I will be coming to Vancouver August 28th to August 31st.
Your products are just GREAT ! Everyone that has tried them wants some. I’ll be coming with a wish list from family and friends and will want to purchase around 10 zip bags or more… in the salt selection and peppers.
I noticed you will not be at Granville during my stay but at the PNE. There seems to be a $ 20.00 entry fee (per person) to the PNE.
All I want is to have the opportunity to buy some of your great products – is there any possibility for me to go to your production facility – I’m ready to take an appointment if necessary to make it easier for everyone.

My fiance and I visited you at your Granville Island location last summer and were superbly impressed with the passion you had for your products. You also shared with us about your upcoming trip to Asia - we hope it went well and hope that it resulted in a new round of inspiration for you. You certainly deserved the break! Honestly, what sold us on your products (and we did come away with many different sea salts and spice blends!) Was the way you described the different ways they could be used in food - to see your eyes close and head tilt back as you described the wonderful effect they had on bringing out and complementing flavors had us excited about trying the combinations ourselves - they did not disappoint whatsoever! :)

We're writing to you now as we prepare for our wedding in Toronto this coming Fall. As part of our appreciation gifts for our wedding helpers, we hope to provide them with a sample of your products (as well as include your business cards so they know that they are supporting quality local food) . I am originally from Vancouver and would also like to bring a taste of home to the people here in Toronto. We're most interested in your sea salt blends, but are also open to your suggestions.

I understand that you don't do mail order any more (and from your website any wholesale/retails sales - and indeed shame on the new management of Edible BC for what they have done), but we are wondering if you have any upcoming trips to Toronto so that we could meet you here. If that isn't possible, we will ask one of our friends to visit you at your Granville Island location to bring the products over for us.
