I had a guest and they do not eat spicy at all  so I make a very mild yellow vegan curry 
Vegetarian stock + some coconut milk
2 leak
 3 carrot
1 acorn squash
10 ocra
3 tomato flesh only
one can of drain chickpea
Turmeric, galangal & black peppercorn
and fry tofu
all cook in on pot and serve with a mix of rice and grains
Very easy and so tasty
